Traditional cuisine of Kunming include Cross-the-bridge noodles, chicken in steam pot, pastry pieces, pastry strips, rice in bamboo tube and Yiliang roast duck, as well as many special dishes of the ethnic minorities. Cross-the-bridge noodles are prepared at the table by adding raw ingredients into hot pot. The story of the noodle is famous-a wife preparing lunch for her husband realized that if she put a thin layer of oil on top of the broth and carried the raw ingredients separately, the hot oil would cook the food once she arrived her husband's study, providing him a hot lunch.
